What is it?
Lecithin — a mixture of phospholipids (mainly phosphatidylcholine, phosphatidylethanolamine, phosphatidylinositol). Sources: soy (soy lecithin), egg yolk (egg lecithin), sunflower (sunflower lecithin). Hydrogenated Lecithin — a saturated version, more stable. Structurally identical to the lipids of cell membranes.
